Saumon grillé:
Grilled wild king salmon with green asparagus, morel mushrooms, marble potatoes, and sauce Béarnaise

Blanquette de volaille:
Root Down Farm chicken cooked in sauce suprême; with chanterelle mushrooms, baby carrots, and pearl onions

Bouillabaisse à la Panisse:
Traditional bouillabaisse with local fish and shellfish, wild fennel, and saffron rouille

Boeuf bourguignon:
Stemple Creek Ranch beef shank braised in red wine; with potato gratin and spring vegetable ragoût
Three course meal, $135 per person
Wine pairing: $75 per person
